Glossary
Edible portion
The weight that remains usable for the final dish or product.
Yield
The percentage of the raw item that remains as edible portion.
Loss breakdown
The split of non-edible parts such as head, guts, bones, shell, and moisture loss.
Effective cost per edible kg
The raw cost divided by the edible weight, expressed per edible kilogram.
Company standard
A saved set of measured loss ratios used by your team.

What if my species is not in the list?
Choose the nearest category, enter the species name, adjust the losses, and save the result as your own standard.
How is round different from fillet?
Each processing mode starts from a different typical loss pattern. Actual yield still depends on size, fat content, freshness, tools, and operator technique.
Can I combine multiple lots?
Yes. Use Multiple Lots mode to add rows; the calculator will total edible weight and aggregate effective cost.
Are the built-in presets exact?
No. They are guides only. Register your own measured ratios as company standards for day-to-day use.
Is any data sent to a server?
No. Calculations, company standards, and exports all run inside the browser.
Can I use this outside Japan?
Yes. The page supports English and Japanese, locale-aware number formatting, and metric or pound-based input for weights and unit price.
Important notes
- Yield changes with fish size, fat content, freshness, tools, machine settings, and operator technique.
- Built-in presets are guides only. Measured company standards should replace them whenever possible.
- Taxes, freight, exchange rates, and reuse of trim or scraps are outside this calculation.
- When multiple lots use different currencies, the calculator does not produce an aggregate cost figure.
