What is the difference between a minus sign and a hyphen?

They serve different purposes. A minus sign is for negative numbers and subtraction, while a hyphen connects words or separates items. This tool can choose replacements by context (e.g., when a number follows like -1).

I want to keep hyphens only in phone numbers.

Turn on "Phone Numbers" protection to exclude digit-hyphen-digit patterns from conversion. Dates (YYYY-MM-DD) and URLs can be protected in the same way.

Does it handle the long vowel mark too?

Yes. The long vowel mark is a separate category you can toggle. When ON, it can unify the half-width long vowel mark (U+FF70) to the full-width long vowel mark (U+30FC), and adjust full-width hyphen-minus (U+FF0D) that appears between katakana characters.
